Our Coffee-Roasting Process

At Café Forte e Gentile, we roast small batches on a weekly basis, so our products are always fresh. Our roasted coffee does not sit in a warehouse waiting to be sold. We bring you a wide selection of coffees enjoyed by coffee lovers in Greater Montreal. We aim to share with you what a delicious cup of coffee tastes like.

Roasting great coffee starts with buying the best green coffee beans available. At Café Forte e Gentile, we get outstanding coffee beans through trusted partner relationships.


The process of roasting is complex. Our roastmaster and team work diligently to obtain each coffee’s ideal flavour: for each coffee, we create a series of sample roasts to identify the best roast level that showcases the coffee’s natural aroma and sweetness. This process is known as profiling. Afterward, to ensure that the flavour is consistent and tastes great in the final cup, we lock in that roast profile and do the packaging to our customers’ specifications. 


We routinely check the quality of a batch of coffee by the process called cupping: coffee batches are scored for aspects such as:

Aroma

Flavor

Acidity

Sweetness

Body

Mouthfeel

Aftertaste

From here onward, you can decide the coffee maker you want to use to achieve your freshly roasted coffee. Our experts will assist you with this process to ensure the coffee you receive tastes the way you want it to.


At Café Forte e Gentile, we have raised the standard of ethically sourced coffee. The coffee beans we brew are Fairtrade certified and grown in safe organic environments. Our farmers live better lives and create fine products delivered straight to our roasting facility.
